Vacuum sealing is the big one. Short of that: wrap tight in plastic, then freezer paper, and squeeze the air out of bags. Ordinary thin storage bags are not freezer packaging.

Slow freezing makes big ice crystals that rupture cells. Don't load a warm freezer with fifty pounds at once, and don't let a stuffed freezer drift warm.
